I'm into architecture, landscape, and really all kinds of photography, but I don't know squad about DSLR specifications though I learn really quickly and I'm quite efficient in Photoshop.
Photography is really just a hobby, though it could grow into something more for me, so I'm looking for the camera that has good functions with some professional abilities. Something that would also would work great for the night shoots with low light without flash is a plus.
After doing a bit of a research I found out that the Canon EOS Rebel XSi is the optimal choice. Is this true, or should i consider something else?

I think it is not that easy to recommend camera as we have different experience and goals. I would suggest you to browse some DSLR camera reviews in this part of the website

It looks to me like the XSi is the better deal. You get a great 12MP dslr plus 2 lenses for less cost. Kit lenses are typically inferior, so the additional 55-250mm lens would make it a winner in my book. To me, Nikon and Canon differences are minor unless you are heavily invested in glass or have a very specific need that only 1 of them can fill.

Yes, I agree with Ratbert. The price that includes two lenses and camera is really great. If you're hesitating about what type of camera to choose, I think, it's just a matter of taste: Canon or Nikon :)
For the night hand-shooting the more ISO value your camera has the better shot you'll get. Also the lens is important. The less aperture number it has (for example, f/3.5 is better than f/5.6), the more details your photos will show.
But if you use a tripod so the main thing is your lens. You will be able to shoot with the lowest ISO (to avoid noise).
